Méthode Cap Classique is our focus
and our latest release, the Brut Nature, was disgorged in April 2011. We add no dosage when the wine is disgorged, so it is a naturally dry and zesty sparkling wine. Both the Brut Nature and the Brut Reserve contains 60% Chardonnay from Robertson and 40% Pinot noir grapes from the Somerset West region. The primary fermentation takes place partly in second or third fill french oak and partly in steel tank. We can't wait for our two latest, very limited additions: a beautiful salmon coloured Brut Rosé (late 2011) and a 48 months on the lees Blanc de blancs (sometime during 2012).
Other wines include a Chenin blanc (with grapes sourced from a very special block of bush vines almost 40 years old), a Syrah made from grapes that come from the wonderful Swartland region, and a Bordeaux-style blend of Cabernet Sauvignon, Merlot and a little bit of Cabernet Franc.

Saltare MCC Brut NatureOur Brut Nature is a fresh wine perfect on it's own anytime during the day and amazing with oysters and other seafood. It spends a minimum of 18 months on the lees and we do not add any sugar or sulphur when it is disgorged. The dates of bottling and disgorgement are printed on each label to give you the exact time the bottle has spent on the lees. Tasting notes: Aromas of sliced grapefruit and white flowers introduce the freshness of the wine, accompanied by brioche and biscuity notes. There are fresh lemon, strawberry, gooseberry, lime zest and honey-cake on the palate, with a delicate texture of oyster shells that reflects the chalky origins of the vines. The fine and consistent mousse leads to a complex, refreshing finish. Production: 3000 bottles per year

Saltare MCC Brut ReserveThe Brut Reserve is our more mature MCC with a minimum of 36 months on the lees, giving it a fuller and more rounded mouthfeel and warmer flavours. It is perfect for matching with a delicious meal. Tasting notes: The wine has almonds, quince, orange peel and camomile flower aromas on the nose. There is creamed honey on the palate followed by layers of brioche, lemon thyme and yellow apple. It has a fine, delicate mousse with a long, complex, creamy finish. Production: 1500 bottles per year

Saltare Chenin blanc 2010Inspired by the Val de Loire. The bushvines look like ancient little trees, struggling for almost forty years on a dryland West-facing slope on the Paardeberg (Swartland). The extreme low yield ensures rich flavours and the mineral-rich soils adds a fresh note to the wine for a perfect balance. This is a food wine like few others. Tasting notes: Delicate naartjie, quince, orange peel and lime on the nose. Palate shows dried apricot and fresh peaches with hints of lanolin and lemon zest. A refreshing minerality compliments the flavours. Production: 1400 bottles

Saltare Syrah 2007Made from the organic grapes of two handpicked rows of Shiraz vines grown on the Swartland's deep red Malmesbury soils, this wine reveals itself in layers of subtlety and mystique. Can be stored, and when opened decant it an hour or more before pouring the first glass. Tasting notes: Layers of mulberry and cherries with delicate violet and thyme aromas. This is a rich, minerally wine with a round creamy palate. It has flavours of cherries, nougat and marzipan with white pepper and hints of cloves. Production: 400 bottles only

Specialis 2006A classic blend of Cabernet sauvignon, Merlot and Cabernet franc made with grapes grown by Agnes de Vos on her farm Damarakloof in Joostenberg, Paarl. Joostenberg's Bordeaux varieties have a very unique fruit and earthy character. Tasting notes: Aromatic and complex Bordeaux blend with layers of berries, blackcurrant, nougat and cherries that reminds of Christmas cake. Soft rounded texture on the palate. Production: 1000 bottles
